Ingredients
- 4 and ½ cups of self rising flour
- 3 tablespoons of sugar
- ½ cups of shortening
- 2 large eggs
- ¾ cups of 2% milk
Filling Ingredients
- 1 and ½ cups mashed sweet potatoes (Boiled or Canned,
- depending on how festive you’re feeling)
- 1 cup sugar
- 1 large egg
- 2 tablespoons of melted butter
- 1 and ½ tablespoons of all purpose flour
- 1 Tablespoon of Vanilla Extract
- Oil for deep frying
Directions:
- Combine flour, sugar into a bowl. Add shortening in until the mixture looks like coarse crumbs. Add eggs and milk into the crumbs. Toss with a fork until a ball forms. Cover and chill.
- In a large bowl, combine the filling ingredients and stir until smooth.
- Divide chilled dough into about 25 portions.
- On a floured surface, roll each portion into 5-inch circles. Spoon out 1- ½ tablespoons of the filling onto each circle.
- Moisten edges of the circles with water and fold in half, press edges with a fork to seal.
- In a cast iron or electric skillet heat 1 inch of oil to 375.
- Fry pies in batches until golden brown (about 1 minute)
- Drain on paper towels.
- Eat them warm or store in refrigerator
