April 2025 – Garlic Veggie Rotini Pasta

Ingredients

for 3 servings

  • 2 tablespoons oil
  • 2 cups sliced mushrooms
  • 2 cups chopped broccoli
  • 4 cloves garlic, chopped
  • 2 bell peppers, sliced
  • 1 tablespoon dried oregano
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 1 ¼ cups cooked rotini pasta

Preparation

  1. Heat the oil in a large pot over high heat. Add the mushrooms, broccoli, garlic, peppers, oregano, salt, and pepper and cook until the vegetables are tender.
  2. Add the pasta and stir until evenly combined.
  3. Enjoy!
